Ingredients

  • 300 g sashimi-fresh white fish (sea bass, snapper, or corvina), cubed
  • Juice of 6–8 limes
  • 1/2 red onion, sliced paper-thin
  • 1 fresh chili (ají limo or any hot red chili), finely chopped
  • A handful of cilantro
  • Optional: sweet potato or mango on the side

Method

  1. 1

Keep everything ice-cold. Put the fish cubes in a cold glass bowl.

  2. 2

Add the lime juice, chili, and onion and toss.

  3. 3

Rest for 2–10 minutes. The edges turn opaque while the center stays raw.

  4. 4

Finish with cilantro and serve right away.
